ESCAROLE

The escarole lettuce has a thorny texture. It has numerous radical leaves in rosettes with serrated edges, curly or straight, depending on the variety. The escarole lettuce should have leaves of medium to dark green color and must look fresh and crunchy.

STORAGE.

ICEBERG 

Iceberg lettuce should be springy-firm, with compact heads, crisp texture and sweet flavor.
After trimming outer wrapper leaves, the leaves should be a bright light green color. Leaves should be crisp and turgid.

STORAGE.

Iceberg Lettuce is vacuum cooled. Storage at 0°C (32°F) with >95 RH are required to optimize lettuce storage life. A shelf-life of 21-28 days can be expected at this temperature and RH. At 5°C (41°F) a shelf-life of 14 days can be expected as long as no ethylene is in the environment. Produces ethylene: No Sensitive to ethylene exposure: Yes


ROMAINE 

Romaine lettuce has an elongated shape with bright green outer leaves and pale green inner leaves. It has a slightly bitter taste, but the rib of the leaves has a very pleasing texture and flavor. Romaine lettuce should be firm, without damage to leaves or ribs, and should have uniform color without visible defects.

RED LEAF

Red leaf  lettuce is a cone shape lettuce, with tough and loosely leaves attached to a short stalk. It is very attractive because to its shape and color going green to the stalk and ends on the top with a red color, giving a crispy texture and intense flavor. Red leaf lettuce should be fresh and crisp showing a nice color combination, with no signs of wilting.

GREEN LEAF

Green leaf  lettuce is a cone-shaped variety of lettuce with elongated leaves that are robust and loosely attached to the stalk. This lettuce has an appetizing shape and color, and offers a crisp texture and intense flavor.

Green leaf lettuce leaves should be a medium to dark green with the ribs and veins of lighter color. The leaves should be curly, fresh, and crisp.

BUTTERHEAD 

Butterhead lettuce is a small and round shape lettuce, with soft and moderately thick leaves, with dark green color and loosely attached to the stalk.

Butterhead lettuce should look fresh and crispy, with a firm green color, without showing signs of wilting.

GOURMET 

Gourmet lettuces are a variety of excellent lettuces for preparing salads, since they offer the possibility to obtaining different presentations, mixing them in different ways, textures, colors and of course flavors, obtaining as a result great dishes, more colorful, more showy, more attractive and… more appetizing! There are 2 types of  gourmet lettuce varieties:

  • Oak Leaf type: these varieties offer round and wavy leaves, with an interesting color variety, red and green, as well as a soft texture.
  • Frisee: these varieties have very long and slender leaves, similar to an escarole lettuce. Also, they offer a great variety of green and dark-red color and a crunchy textures.

Gourmet lettuces should have fresh and crunchy looking, and the leaves should be compacted.

Kale or leaf cabbage is a group of vegetable cultivars within the plant species Brassica oleracea. They have green or purple leaves, in which the central leaves do not form a head.
